Why it matters

The hardest shell, the most rewarding nut

The macadamia's famously hard shell is exactly why it tastes so good. It protects a delicate, buttery kernel until the very last moment, and cracking it cleanly, without bruising the kernel, is a craft in itself.

That single, precise crack is the heart of everything we do: the culmination of years of patient growing, and the start of the kernel's journey to you.

  1. Step 01

    Grow

    Macadamia trees flourish for years in our sub-tropical orchards before they bear their first harvest. Patience is built into everything we do.

  2. Step 02

    Harvest

    Ripe nuts fall naturally to the orchard floor and are gathered in regular sweeps through the season, at the peak of maturity.

  3. Step 03

    Crack

    The famously hard shell is precision-cracked to free the kernel whole, the step macadamias are renowned for.

  4. Step 04

    Dry

    Kernels are slowly, gently dried to draw moisture down to the ideal level, concentrating that signature buttery flavour.

  5. Step 05

    Sort

    Each kernel is graded and hand-checked for colour, size and wholeness, so only the finest carry the Zera name.

  6. Step 06

    Pack

    Sealed fresh for retail shelves, gourmet gifting and export pallets, traceable from our orchard rows to your table.
